For breakfast today, I decided to be adventurous. I made a Low Carb Eggs Benedict with Hollandaise sauce. It was yummy. Here is the recipe I used. I ate mine over a tomato. No Instagram worthy pictures here. :)
For dinner, we had steak, asparagus, and Costa Rican beans and rice. We haven't had them since we were in Costa Rica last spring break, so it was fun to add them to my birthday dinner. We had great conversations about our Costa Rican vacation as well. Here is the recipe for those that want to try it. Lizano sauce is amazing! Pura Vida!
